Ingredients for Beefsteak Casserole

For Serves 6.
  • 6 sirloin steaks, weighing 8 oz. each
  • - Salt and pepper
  • 1 cup orange juice
  • 4 tablespoons lard, or vegetable oil
  • 3 onions, chopped
  • 2 garlic cloves, chopped
  • 1/2 teaspoon oregano
  • 3 tablespoons beef stock

Preparation of Beefsteak Casserole

1. Season the meat with salt and pepper to taste. Place in a bowl and add orange juice. Cover, and refrigerate overnight, turning once or twice.

2. Lift the steaks out of the marinade and pat dry. Reserve the marinade. Heat the lard in a heavy frying pan and sauté the onions and garlic with the oregano. When the onions are tender, but not browned, push them to one side and sauté the steaks until lightly browned on both sides. Add the marinade and beef stock. Cover and cook until the steaks are tender.
