1. Remove the meat from the chicken or hen bones and break into bite size pieces; set aside.
2. In a saucepan heat the oil and fry the onion, garlic, chilies, salt and pepper to taste. Fry until golden and add the bread. Cook slowly for 10 minutes then add the nuts, cheese and reserved chicken. Two or three minutes before serving add the evaporated milk.
2. Serve with cooked rice and decorate with hard-boiled eggs and olives.
