Ingredients for Fish Cebiche

For Serves 6.
  • 2 lbs. white fish, cleaned and cut in 1 inch cubes
  • 3 medium onions, sliced
  • 1 tablespoon ground chili
  • 3 fresh chilies, seeded and sliced
  • - Juice of 10 small lemons
  • - Juice of 2 bitter oranges (optional)
  • - Salt and pepper
  • 2 large ears of corn, cooked
  • 2 lbs. sweet potatoes, cooked

Preparation of Fish Cebiche

1. Put the fish in a colander and pour boiling water over it. Drain well and put in a bowl. Add the onion, ground chili, fresh chilies, salt and pepper. Add enough lemon juice to cover. If bitter oranges are not available add more lemon juice. Cover tightly and allow to marinate about 3 hours until the fish is "Cooked- (white and not transparent). Serve garnished with corn and sweet potatoes cut in thick slices.
