1. Mix the sweet potatoes purée, butter, cinnamon, sugar and shape with your hands into medium size balls. Dip in the beaten egg and roll over the crumbs twice.
2. Heat the oil in a frying pan and fry the fritters until lightly browned. Drain and place on paper towel. Serve hot.
