Ingredients for Sweet Potato Fritters

For Serves 6.
  • 3 cups sweet potato purée
  • 1 egg, beaten
  • 1/2 cup butter
  • 1/4 teaspoon powdered cinnamon
  • 1/4 cup sugar
  • 1 cup oil
  • - Bread o cracker crumbs

Preparation of Sweet Potato Fritters

1. Mix the sweet potatoes purée, butter, cinnamon, sugar and shape with your hands into medium size balls. Dip in the beaten egg and roll over the crumbs twice.

2. Heat the oil in a frying pan and fry the fritters until lightly browned. Drain and place on paper towel. Serve hot.
