1. In a bowl mix the lentils with all other ingredients, reserving 2 eggs, 1 cup breadcrumbs and oil. Form little balls with the hands and dip them in the beaten eggs and roll over the bread-crumbs twice.
2. In a frying pan, heat the oil and fry the balls until they are browned. Drain in paper towel and serve hot , garnished with parsley.
