Ingredients for Vigoron

For Serves 6.
  • 3 lbs. fresh yuca, peeled
  • 1/2 cabbage, chopped
  • 3 tomatoes, peeled and chopped
  • 2 tablespoons vinegar
  • - Salt
  • 2 lbs. fried pork rinds

Preparation of Vigoron

1. Put the yuca in a saucepan with boiling water and cook about 20 minutes. Add salt and cook a few minutes more until very soft. Drain and set aside.

2. In a bowl mix the cabbage and tomatoes; season with salt and vinegar. Cut the yuca in serving pieces and place in a serving dish. Sprinkle with pork rinds and cover with the cabbage and tomato mixture.
