Ingredients for Mexican Style Beans

For Serves 4-6.
  • 1/2 lb. beans, cleaned and soaked the night before
  • 8 cups water
  • 1 onion, finely chopped
  • 2 tablespoons butter

Preparation of Mexican Style Beans

1. In a saucepan put the beans to boil with the onion. When their skins wrinkle, add 1 tablespoon butter. When almost done, add salt to taste and continue cooking until the beans are very soft. Pour the broth into another bowl. Mash

  • 3 tablespoons of the cooked beans and mix with the broth, then strain.
  • 2. In a frying pan melt remaining butter and fry the reserved beans. Mix with the bean stock, season and simmer until very thick.
