Ingredients for Enchiladas

For Serves 8.
  • 2 medium onion, chopped
  • 3 tomatoes, chopped
  • 2-3 green chilies chopped
  • 1/2 cup coriander finely chopped
  • 1 garlic clove, chopped
  • - Salt and pepper
  • 1/2 cup oil
  • 16 corn tortillas
  • 16 slices of cheese,
  • - Minster or Monterey Jack
  • 1 cup whipping cream
  • 1/2 cup Parmesan cheese, grated

Preparation of Enchiladas

1. Blend the onions, tomatoes, chilies, coriander, garlic, salt and pepper in theblender or processor until smooth. Cook the sauce in the oil for 20-30 minutes until light brown.

2. Grease a deep casserole. Fill each tortilla with a slice of cheese, roll up and cover the bottom of the casserole with the rolled tortillas.

3. Then cover with the fried tomato sauce, cream and grated cheese. Bake in the oven at 3502 for 30 minutes.
