1. Soak the chick peas in water overnight. Drain and discard the water. Put the chick peas into a large saucepan and cover with cold water. Bring to a boil for 15 minutes; simmer for 45 minutes or until the chick peas are tender.
2. When the chick peas are cooked, strain off the cooking liquid. Place them in a bowl and add oil and vinegar; mix well. Add the parsley, mix and let cool.
3. Add the onion, peppers and olives; mix well and refrigerate.
