1. In a heavy saucepan put the chicken pieces with the pineapple and its juice. Add all the rest of the ingredients including salt and pepper. If the liquid is not enough, cover the chicken pieces with the broth. Cover and simmer over low heat until the chicken is tender, about 45 minutes. If the sauce is abundant, boil to reduce. Serve with rice.
