Ingredients for Ecuadorian Sauced Beef

For Serves 4.
  • 2 lbs. flank steak
  • 1/2 lb. potatoes, peeled and boiled
  • 2 tablespoons lard
  • 2 onions, chopped
  • 1 green pepper, chopped
  • 2 tomatoes, peeled and sliced
  • 4 tablespoons peanut butter
  • 2 cups milk
  • - Parsley, chopped
  • - Hard-boiled eggs, chopped

Preparation of Ecuadorian Sauced Beef

1. Season the meat and bake in the oven; when tender put in deep serving dish. Cover with freshly boiled potatoes cut in slices and serve with the following sauce:

2. In a frying pan heat the lard and fry the onions and green pepper. When soft add the tomatoes and cook until sauce is smooth and bubbling. Blend in the peanut butter and slowly add the milk. Simmer while stirring continuously, and serve when sauce is thick, garnished with parsley and eggs.
