Ingredients for Cheese Sauce

For Serves 2.
  • 1 tomato, peeled and chopped 1 fresh red or green pepper
  • 1 1/4 cups fresh cheese or ricotta Salt and pepper
  • 1 onion, chopped
  • 1 hard-boiled egg, chopped

Preparation of Cheese Sauce

1. In a blender or food processor combine the tomato, pepper and cheese and reduce to a purée. Be careful not to over blend.

2. Season to taste with salt and pepper and put into a bowl. Sprinkle with onion and egg. Serve as a sauce with potatoes and cooked green vegetables.
