1. Combine the coconut milk, pineapple, sugar and almond extract in an electric blender and blend at high speed until the mixture is very smooth and the pineapple completely pulverized.
2. Strain through a fine sieve, pour into a jug and refrigerate until thoroughly chilled. Serve in tumblers with ice cubes and add the rum.
