Ingredients for Meat Salad

For Serves 6.
  • 1 1 /2 cups cooked meat, chopped
  • 1 1/2 cups cooked chicken, chopped
  • 1 lb. boiled potatoes, cubed 1 green pepper, peeled (burn directly over flame to peel) and chopped
  • 1 lettuce, chopped
  • 2 tablespoons finely chopped onions
  • 1 tablespoon capers
  • 3 oz. sliced pimento-stuffed green olives
  • 2 pimentos, chopped

For the dressing:

  • 12 tablespoons olive oil
  • 4 tablespoons white vinegar
  • - Salt and pepper

Preparation of Meat Salad

1. In a salad bowl combine all the salad ingredients.

2. In a separate bowl whisk together the oil, vinegar, salt and pepper; pour over the salad and toss lightly.
