1. In a saucepan melt 1 tablespoon butter and saute some onion and achiote to taste. Once transparent, add the corn with a little chicken broth to soften; add the chayote and stir.
2. Once cooked add the milk, butter, sugar, salt, pepper, cumin y coriander; simmer over low heat. Serve hot once thickened.
