  • 1/2 lb. raisins
  • 5 cups coconut milk
  • 2 cups long-grain rice 2 teaspoons sugar
  • 1 tablespoon butter
  • - Salt

Preparation of Rice with Coconut and Raisins

1. Put the raisins into a heavy saucepan and pour the coconut milk; let soak for 30 minutes. Add the rice, sugar, butter, and salt to taste. Cover, bring to a boil, stir once; reduce the heat to low, and cook the rice, covered, until the rice is tender and dry (20-25 minutes).
