Ingredients for Chicken with Creole Sauce

For Serves 4.
  • 1 chicken (2 1/2-3 lbs.), in pieces
  • - Salt and lemon juice
  • 4 tablespoons oil
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 6 ears of corn, cooked, kernels only
  • 5 tomatoes, peeled, seeded and chopped

Preparation of Chicken with Creole Sauce

1. Season chicken with salt and sprinkle with lemon juice.

2. In a heavy saucepan heat the oil and brown the chicken pieces. Reduce the heat and cook the chicken at low temperature.

3. In another saucepan heat the butter and fry the onion until transparent. Add the kernels of corn and tomatoes; stir and cook 30 minutes at low temperature. Serve the chicken with the sauce.
