Ingredients for Argentine Beef Stew

For Serves 6.
  • 1/4 cup olive oil
  • 2 lbs. lean beef, cut into cubes
  • 1 large onion, finely chopped
  • 1 garlic clove, chopped
  • 3 medium tomatoes, peeled and chopped
  • 1/2 teaspoon oregano
  • 1 bay leaf
  • 1 teaspoon sugar
  • 1 tablespoon tomato paste
  • - Salt and pepper
  • 1 cup beef broth
  • 1 cup red wine
  • 1 lb. sweet potatoes (boniatos), peeled and sliced
  • 1 lb. potatoes, peeled and sliced
  • 1 lb. butternut squash, peeled and sliced
  • 6 peaches, peeled
  • 4 ears corn, cut into 3 slices each

Preparation of Argentine Beef Stew

1. Heat the oil in a large, heavy saucepan and saute the beef until it is lightly browned. Push to the side and addonion and garlic. Sauté onion until soft. Add tomatoes and cook 5 minutes. Add oregano, bay leaf, sugar, tomato paste, salt and pepper to taste, broth, and wine. Cover and simmer for 1 1/2 hours, or until the meat is almost tender.

2. Add sweet potatoes and potatoes and a little more stock and wine if necessary to cover. Simmer for 10 minutes, then add the squash and peaches, and simmer for 10 minutes. Add the corn and cook 5 minutes, or until all the ingredients are tender.
