For the dressing:
1. Mix turkey with apples, celery and watercress. Add the dressing.
2. Prepare dressing. In a bowl mix lemon juice, mustard, egg yolk, salt and pepper. Beat until thick. Add oils drop by drop until thick.
3. Mix the salad with dressing; correct seasonings and refrigerate covered. Serve in individual plates decorated with lettuce and sprinkled with chopped nuts.
