Ingredients for Pork Roast

Ingredients for Serves 6.
  • 4 lbs. pork loin
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon thyme
  • 1 garlic clove, minced
  • - Salt and pepper
  • 1 cup beef broth

Preparation of Pork Roast

1. Preheat oven to 350ยบ.

2. In a bowl combine the oil, lemon juice, thyme, garlic, salt and pepper. Rub the mixture into the pork loin.

3. Place the meat fat side up, on a rack in a roasting pan. Roast about 1 1/2 hours, or 35- 45 minutes per pound.

4. When meat is done, remove to a platter and pour off the fat in the pan. Add stock to the pan and bring to a boil. Thicken if desired, with a little flour mixed with water.
