Mexican Cooking

Ingredients serves 6

  • 12 Mexican flour tortillas

For the beef filling

  • 1 lb ground beef
  • 2 tablespoons oil
  • 3 tomatoes, diced
  • 3 onions, sliced into thin rounds
  • ½ cup parsley, finely chopped

For the chicken filling

  • 2 chicken breasts, shredded
  • 2 tablespoons oil
  • 1 green and 1 red bell pepper, cut in fine julienne
  • 1 small onion, sliced
  • Finely chopped green onion for garnish

Preparation

1 The meat filling: heat oil in a frying pan, add meat and sauté 8 minutes. Add the remaining ingredients, stir to mix well and keep hot until ready to serve.

2 The chicken filling: heat oil in a frying pan, add the chicken and cook until golden. Add the remaining ingredients and cook another 5 minutes. Keep hot until ready to serve.

3 Heat the tortillas in the oven set at medium heat. Fill the tortillas and serve each plate with one beef and one chicken tortilla. Garnish with chopped green onion or other ingredient of choice.
