Mexican Cooking

Ingredients serves 6

  • 12 Mexican flour tortillas
  • ½ lb grated mozzarella cheeseFilling options
  • 2 green chili peppers, seeded and chopped
  • 1 tomato, peeled, seeded and chopped
  • ½ cap cilantro, finely chopped
  • 1 cup small, sautéed shrimp
  • 1 cup shredded crab meat
  • 1 cap fried ground beef
  • Taco sauce and sour cream to accompany

Preparation

1 Place 6 tortillas on a baking sheet. Sprinkle cheese and 2 tablespoons of desired filling over each.Fillings can be mixed or served individually.

2 Top each tortilla with another and press lightly. Heat in the oven set at medium heat until the cheese melts.

3 Cut each quesadilla into quarters and serve with taco sauce and sour cream.
