1. Prepare the batter. In a bowl mix the flour, eggs, half of the milk, butter, salt and sugar. Mix well and whip until soft; add the rest of the milk, water and oil. Stir to blend and add more water if necessary. Prepare the crêpes in a frying pan and set aside.
2. Prepare the sauce. In a saucepan melt the butter and cream until thick, 20-30 minutes. Add the cheeses and pimentos to taste. Remove from the heat and cool. Fill the crêpes and roll. Place them in an oven dish and pour the remaining sauce over the crêpes. Serve hot decorated with pimentos.
