Ingredients for Serves 4.
  • 4 halves canned peaches
  • 4-6 coconut or almond cookies, ground
  • 1/3 cup unblanched almonds, finely chopped
  • 3/4 cup raspberry jam
  • 1 tablespoon almond liqueur

Preparation of Stuffed Peaches

1. In a bowl mix cookies, almonds, jam and liqueur. Make a paste and stuff each peach.

2. Serve in a plate over a thin layer of raspberry jam. Garnish with whipped cream.
