Ingredients for Makes 2 1/2 cups.
  • 1 oz. unsweetened chocolate, chopped 4 tablespoons sugar
  • 1 cup whipping cream

Preparation of Chocolate Chantilly

1. In a double-boiler put chocolate, sugar and 2 tablespoons cream; place over low heat. Once the chocolate has melted, remove from heat and whip until the mixture is cold.

2. Whip the remaining cream and fold into the chocolate mixture.
