1. Peel the cucumbers, cut in half lengthwise, scrape out the seeds with a spoon and cut into 1/2-inch crosswise slices. Drop into boiling salted water and cook for 5 minutes. Drain and place in a warmed vegetable dish.
2. Melt the butter in a small saucepan. Stir in the flour and cook for 1 minute, but do not color. Add the orange juice, stir and cook until thickened. Season to taste with salt and pepper; add rind and mix thoroughly and pour over the hot cucumbers.
