Ingredients for Fish Anticuchos
For Serves 4. - 1 medium sea bass (approx. 2 lbs.), skinned and cut in fillets
- 2 tablespoons oil
- 1/2 cup red wine vinegar
- 2 tablespoons red chili, ground
- 1 teaspoon garlic, ground
- 1/2 teaspoon cumin seed, ground
- - Salt and pepper
Preparation of Fish Anticuchos
1. Cut the fish into 1 inch. cubes. Place in a bowl and marinate for 1 1/2 hours in the oil, vinegar, red chili, garlic, cumin seed, salt and pepper.
2. Thread four pieces of fish on wooden or metal skewers and cook on the grill over direct heat.
