Rice with Pork

Ingredients for Rice with Pork
For Serves 4. - 3 garlic cloves, crushed
- 1 onion, chopped
- 1 red or green pepper, chopped
- 1 bay leaf, crumbled
- 1 tablespoon parsley, chopped
- 2 tablespoons white vinegar
- - Salt
- 1 lb. boneless pork, cut into 1 inch cubes
- 2 slices bacon, chopped
- 1/4 cup boiled ham, chopped
- 4 tablespoons lard
- 3 tablespoons tomato purée
- 2 cups raw long-grain rice
- 1 tablespoon capers
- 12 pimento-stuffed green olives, halved
Preparation of Rice with Pork
1. Combine garlic, onion, pepper, bay leaf, parsley, vinegar, salt, pork, ham and bacon and marinate for 1 hour.
2. In a heavy saucepan heat the lard and sauté the marinated mixture for 2-3 minutes.
3. Add the tomato purée, rice, capers, olives and 4 cups cold water. Stir to mix, bring to the boil, cover and cook over very low heat until the rice is tender and has absorbed all the liquid.
