Ingredients for Red Sauce for Black Beans
For Serves 4. - 3/4 cup olive oil
- 3/4 lb. Tomatoes, peeled and seeded
- 2 garlic cloves, crushed
- 1/4 teaspoon black pepper
- 1/2 teaspoon Cayenne pepper
- 1/4 teaspoon oregano
- 1/2 teaspoon sugar
- - Salt
- 4 tablespoons tomato purée
- 1/2 lb. pimentos, chopped with the liquid from the tin
- 3 tablespoons vinegar
Preparation of Red Sauce for Black Beans
1. In a saucepan heat the oil and add the tomatoes. Cook for 5 minutes, stirring with a wooden spoon until the tomatoes have disintegrated.
2. Add the rest of the ingredients, except the vinegar, and cook, stirring from time to time, over low heat until the sauce is thick. Remove from the heat and stir in the vinegar.
