Ingredients for Meat Salad
For Serves 6. - 1 1 /2 cups cooked meat, chopped
- 1 1/2 cups cooked chicken, chopped
- 1 lb. boiled potatoes, cubed 1 green pepper, peeled (burn directly over flame to peel) and chopped
- 1 lettuce, chopped
- 2 tablespoons finely chopped onions
- 1 tablespoon capers
- 3 oz. sliced pimento-stuffed green olives
- 2 pimentos, chopped
For the dressing:
- 12 tablespoons olive oil
- 4 tablespoons white vinegar
- - Salt and pepper
Preparation of Meat Salad
1. In a salad bowl combine all the salad ingredients.
2. In a separate bowl whisk together the oil, vinegar, salt and pepper; pour over the salad and toss lightly.
