Ingredients for Beef Hash
For Serves 6. - 3 tablespoons oil
- 1 onion, chopped
- 1 green pepper, chopped
- 1 garlic clove, chopped
- 1 red pepper, chopped
- 2 lbs. Meat (beef or pork or mixed)
- 2 tomatoes, peeled and chopped
- 1/2 teaspoon cumin
- - Salt and pepper
- 1/4 cup seedless raisins
- 2 tablespoons pimento-stuffed
- - green olives, chopped
- 1 tablespoon capers
Preparation of Beef Hash
1. In a saucepan heat the oil and cook the onion, green pepper, garlic and red pepper until the onion is tender. Add the meat and cook until it has lost its color. Add the tomatoes, cumin, salt, pepper and raisins and cook for 20 minutes.
2. Add the olives and capers, and cook for a few minutes longer. Serve with white rice, black beans and fried ripe plantains.
