Corn and Chayote Ajiaco

Ingredients for Corn and Chayote Ajiaco
For Serves 4. - 2 tablespoons butter
- - Onion, chopped, to taste
- - Achiote, salt, pepper and cumin, to taste
- 4 fresh ears of corn, grated
- - Chicken broth to taste
- 6 fresh chayotes, peeled and chopped finely
- 4 cups milk
- - Dash of sugar
- 3 fresh coriander sprigs
Preparation of Corn and Chayote Ajiaco
1. In a saucepan melt 1 tablespoon butter and saute some onion and achiote to taste. Once transparent, add the corn with a little chicken broth to soften; add the chayote and stir.
2. Once cooked add the milk, butter, sugar, salt, pepper, cumin y coriander; simmer over low heat. Serve hot once thickened.
