Ingredients for Potatoes with Cheese, Tomato and Onion Sauce
For Serves 6. - 6 large potatoes
- 2 tablespoons butter
- 1 onion finely chopped
- 2 tomatoes, peeled and chopped
- - Salt and pepper
- 1/2 cup heavy cream
- 1 cup grated Munster cheese
Preparation of Potatoes with Cheese, Tomato and Onion Sauce
1. In a large saucepan boil the potatoes until tender. Drain the potatoes; peel and keep warm.
2. In a skillet heat the butter and sauté the onion until softened. Add the tomatoes and salt and pepper to taste.Cook stirring for 5 minutes. Add the cream and cheese, and cook stirring until the cheese is melted. Pour the sauce over the potatoes.
