Ingredients for Hen Soup
For Serves 6-8. - 14 cups water
- 1 hen, cut into serving pieces
- 1 lb. oxtail, cut into serving pieces
- 2 onions, chopped
- 2 tomatoes, chopped
- 4 plantains, peeled and cut into pieces
- 1 lb. yuca, peeled and cut into pieces
- - Salt, cumin, pepper, saffron to taste
- 2 tablespoons coriander, chopped
Preparation of Hen Soup
1. In a large saucepan put the water, hen, oxtail, onion and tomatoes.
2. Cook, covered, for 1 hour. Add the plantains and cook 30 minutes. Add the yuca, salt, pepper, cumin, saffron and cook 30 minutes or until all ingredients are tender. Serve the soup sprinkled with chopped coriander.
