Ingredients for Stuffed Onions with indian Sauce
Ingredients for Serves 6. - 6 medium onions, cooked and ready to stuff
- 2 tablespoons oil
- 1 medium onion, finely chopped
- 1 garlic clove, minced
- 1 small apple, peeled and cut in small cubes
- 1 tablespoon curry powder
- 1 1/4 cups chicken broth
- - Zest of 1/2 lemon
- 1/2 tablespoon lemon juice
- 1/2 lb. potatoes, peeled
- 1/2 lb. carrots, peeled
- 1/2 lb. Cauliflower, in flowerets
- 1/2 lb. Zucchini, in thin slices
- 1/3 cup raisins
- 1/4 cup almonds, slivered
- 1 tablespoon parsley, finely chopped
Preparation of Stuffed Onions with indian Sauce
1. In a skillet heat the oil, add the onion, garlic and apple. Sauté 5 minutes over medium heat.
2. Sprinkle the curry over the mixture and cook 2 minutes. Add the broth and lemon zest. Bring to a boil, reduce the heat and cook 2 minutes.
3. Cut the potatoes in cubes and the carrots in strips. Add them to the curry sauce, cover and simmer 10 minutes.
4. Add the cauliflower, zucchini and raisins; stir carefully. Cover and simmer 10 minutes, until the vegetables are tender. Transfer to a bowl and let cool.
5. Before stuffing the onions, add to the mixture the almonds and parsley. Stuff the onions with the sauce.
