Ingredients for Stuffed Beets
Ingredients for Serves 6. - 2/3 cup sour cream
- 1 teaspoon horseradish sauce
- 1 teaspoon lemon juice
- - Salt and pepper to taste
- 1 1/2 lbs. cooked beets
- 1 medium onion, finely chopped
- 3-4 scallions, chopped
Preparation of Stuffed Beets
1. Mix the sour cream, horseradish sauce and lemon juice; season with salt and pepper. Set aside.
2. Scoop out the beets and finely chop the flesh. Mix with the onion and the reserved sauce. Stuff the beets with the mixture and garnish with the scallions.
