Ingredients for Spinach and Yogurt Salad
Ingredients for Serves 4. - 1/2 lb. fresh spinach leaves
- 4 scallions, finely chopped
- 1 cup unflavored yogurt
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 hard-boiled eggs, peeled and chopped
- 15 black olives Dash of paprika
Preparation of Spinach and Yogurt Salad
1. Wash, drain, and pat dry the spinach leaves. Cut into bite sizes and place in a bowl with the scallions.
2. In a small bowl mix the yogurt, oil, salt and pepper. Add the eggs. Pour the mixture over the spinach and fold carefully. Decorate with olives and sprinkle with paprika.
