Ingredients for Potato and Corn Salad
Ingredients for Serves 6. - 1 1/2 cups corn kernels, cooked
- 3 lbs. potatoes cooked, peeled and cubed
- - Salt and pepper
- 2 green peppers, skinned and diced
- 3 scallions, chopped
- 1 green chili, seeded and chopped
- 1/3 cup sour cream
- 2 tablespoons oil
- 2 tablespoons lemon juice
- 3/4 teaspoon ground cumin
Preparation of Potato and Corn Salad
1. In a bowl mix the corn with the potatoes; season with salt and pepper. Add the peppers, scallions and chili. Mix well.
2. In a bowl beat together sour cream, oil, lemon juice, cumin and seasonings. Pour the dressing over the salad and mix well.
