Ingredients for Broccoli and Cheese Soup
Ingredients for Serves 4-6. - 1 cup leeks, chopped
- 1 cup mushrooms, sliced
- 3 tablespoons butter
- 3 tablespoons flour
- 3 cups chicken broth
- 1 1/2 cups broccoli, flowerets only
- 1/2 cup milk
- 1/2 cup cream
- 1 cup Munster cheese, grated
Preparation of Broccoli and Cheese Soup
1. In a large skillet sauté in butter the leeks and mushrooms for 10 minutes. Add the flour and cook 2-3 minutes. Gradually add the broth, stirring and cook until thickened. Add the broccolis, reduce the heat and simmer 20 minutes. Add milk, cream and cheese; stir until smooth and cheese melts. Do not let mixture boil.
