1. Remove all fat from pork and cut into 1-inch pieces.
2. In a bowl mix garlic, coriander, Cayenne pepper, salt, and oil. Let stand for 5 minutes. Add remaining ingredients. Toss with pork and let marinate 24-48 hours.
3. Preheat the barbecue.
4. Skewer the pork pieces on bamboo sticks or metal skewers. Grill over hot coals 6-7 minutes per side, basting with marinade.
