Ingredients for Spring Pasta
Ingredients for Serves 4-6. - 2 garlic cloves, minced (optional)
- 2 carrots cut in thin sticks
- 2 cups mushrooms cut in thin sticks
- 3 tablespoons butter
- 2 zucchinis, grated
- 2 ozs. Prosciutto cut in thin strips
- 1 tomato, peeled, seeded, chopped
- - Salt and pepper
- 3/4 lb. dry pasta
- 1/2 cup Parmesan cheese, grated
Preparation of Spring Pasta
1. In a heavy skillet melt the butter and sauté the garlic, carrots and mushrooms, 2 minutes. Add zucchini and ham; sauté 1 minute. Add tomato and cream. Simmer 5 minutes. Add the basil and season with salt and pepper. Set aside and keep warm.
2. In a large saucepan with plenty of boiling salted water cook the pasta al dente. Drain and place in a serving dish. Pour the sauce and serve immediately.
