1 Heat oil in a saucepan over medium heat. Add the onion and sauté 3 minutes. Add the tomato, green pepper, bacon, and pork ribs. Stir the mixture well and cook 5 minutes. Add the beans with their soaking water and more if necessary to cover beans.
2 Raise the heat and bring beans to a boíl. Cook and stir for 5 minutes. Reduce the heat and simmer, stirring occasionally for 45 minutes or until the beans are soft. Add more water if necessary to prevent beans from drying.
3 Serve the stew very hot with the accompaniments.

It is usually eat this succulent dish on winter weekends so we can cake a nice long siesta afterwards. The ideal companion here would be a rather rustic, high-alcohol wine. Some red blends, especially those with a significant portion of the variety Carignan would work perfectly.
