Ingredients for Smelts and Spinach Au Gratin
Ingredients for Serves 4. - 2 1/2 lbs. smelt fillets
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 3 tablespoons olive oil
- 1/2 lb. fresh spinach, washed and stems removed
- - Salt and white pepper
- 1/4 cup sesame seeds or breadcrumbs
Preparation of Smelts and Spinach Au Gratin
1. Preheat oven to 400º.
2. In a heavy skillet sauté the onion and garlic in the olive oil; cook until transparent.
3. Grease a baking dish. Place at the bottom the raw spinach alternating with the fish fillets. Season with salt and pepper. Spread the onion and garlic over the fish. Top with sesame seed or bread crumbs. Bake 15-20 minutes.
