Preparation of Mushroom Quiche

1. Preheat oven at 350ยบ Grease 4 flan molds or quiche pans.

2. Sift together flour and salt. In a small saucepan heat the water and lard until melted. Pour over the flour and mix until the dough is smooth. Roll over a floured board and line the molds with the dough. Refrigerate while making the filling.

3. In a frying pan cook the mushrooms in butter for 5 minutes. Remove from heat and reserve. Add the flour to the pan and stir 1 minute. Gradually add the milk and boil until it thickens. Remove from heat. Add mustard and grated cheese. Check seasoning.

4. In a bowl beat cream cheese until smooth. Add yolks and continue beating. Add beaten egg whites and the reserved mushrooms. Pour over lined molds and bake for 35-40 minutes. Before serving sprinkle with grated Parmesan or Swiss cheese and broil a few minutes. Decorate with mushrooms.
