1. Peel a strip around the top and bottom of each apples. Place them in a baking dish and pour the apple juice and cider.
2. Cook in a 375ยบ oven 30 minutes or until tender. Transfer to a serving dish or individual plates.
3. Prepare the caramel. In a saucepan put the sugar with 1/2 cup water. Heat and stir with a wooden spoon until the sugar dissolves. Once the sugar starts coloring, swirl the pan. Be careful not to burn the caramel; it must be golden. Pour immediately over the apples. Serve with whipping cream.
