Ingredients serves 4

For the crepes

  • 2 teaspoons cornstarch
  • 2 tablespoons water
  • 8 large eggs
  • 2 teaspoons sugar
  • 1 teaspoon salt

For the filling

  • ½ lb spinach
  • 4 cups shari (prepared sushi rice)
  • 2 pieces kanikama (imitation crab meat)
  • 1 carrot, peeled and finely chopped
  • 3½ oz peas and shrimp
  • Soy sauce, wasabi, and gari to accompany

Preparation

1 The crepes: beat all ingredients in a bowl and mix until well-blended. Prepare the crepes by covering the surface of a small frying pan with a thin layer of the mixture. Cook on high heat 1 minute per side. Repeat the process until all the mixture is used and reserve prepared crepes.

2 Drop the spinach into boiling water for 10 seconds and then into cold water for another 10 seconds. Drain and cut into strips to fill or tic sushi.

3 Use the crepes to form rolls or little packets filled with the rice and other ingredients to taste.

4 Serve accompanied by soy sauce, wasabi, and gari.
