Ingredients serves 6

  • 5 tablespoons butter
  • ½ cup oil
  • 1 onion, chopped
  • 6 green chili peppers, seeded and sliced
  • 6 tomatoes peeled, seeded and chopped
  • 1 tablespoon tomato sauce
  • 1 cup white wine
  • 2 cups vegetable stock
  • 2 lbs tripe, cooked and cut into strip
  • 4 pigs feet, cooked and shredded
  • 6 sausages, cooked and sliced
  • Fried potatoes to accompany

Preparation

1 Heat butter and oil in a frying pan. Fry the onions for 5 minutes. Add the chili pepper, tomatoes, and tomato sauce. Add the wine and vegetable broth.

2 Add the tripe and pigs feet. Cook over medium heat until the broth reduces, about 15-20 minutes.

3 Add the sausage and serve very hot with fried potatoes.
