Ingredients serves 6

  • 2 tablespoons oil
  • 1 medium onion, finely chopped
  • 3 tomatoes peeled, seeded and chopped
  • 1 red bell pepper, finely chopped
  • lb thick-slice bacon, chopped
  • 6 smoked pork ribs
  • 1 lb black beans, cleaned and soaked overnight
  • Salt and pepper
  • 3 chorizo sausages, fried in oil

For the accompaniments

  • White rice
  • Spinach, chopped and sautéed
  • Chunky tomato salsa
  • Green bell pepper chopped
  • Caramelized oranges

Preparation

1 Heat oil in a saucepan over medium heat. Add the onion and sauté 3 minutes. Add the tomato, green pepper, bacon, and pork ribs. Stir the mixture well and cook 5 minutes. Add the beans with their soaking water and more if necessary to cover beans.

2 Raise the heat and bring beans to a boíl. Cook and stir for 5 minutes. Reduce the heat and simmer, stirring occasionally for 45 minutes or until the beans are soft. Add more water if necessary to prevent beans from drying.

3 Serve the stew very hot with the accompaniments.
